Spicy Sausage Balls (Gluten Free)
Makes about 50
1 1/4 cup gluten free all purpose flour blend (I use Bob’s Red Mill)
1 1/2 tsp baking powder
1/2 tsp cayenne pepper (I add a pinch extra because I like them hot!)
2 cups grated sharp cheddar cheese
1 pound breakfast sausage
3 tbsp melted butter
Preheat oven to 400 degrees. Whisk together GF flour, salt, pepper, cayenne pepper, and baking powder in a medium bowl. Mix in cheddar. Add sausage and butter and mix well with your hands until well combined. Roll mixture into 1-inch balls. Place balls, 1/2 inch apart, on a parchment-lined baking sheet. Bake 25 minutes. Serve warm. Cooked sausage balls can be made ahead and stored in the freezer. Reheat in a warm oven before serving.
