Note: For this recipe you will need a vegetables spiralizer. You can find one online at Amazon or at most kitchen stores and department stores.
First, make the pesto:
2 cups fresh basil
1/2 cup pine nuts
2 cloves garlic
1/2 cup extra-virgin olive oil
Sea salt and freshly ground pepper, to taste
1 tablespoon lemon juice
3 tablespoons nutritional yeast
1 pinch cayenne pepper (or more to taste)
Place all ingredients in a food processor or small high-speed blender and pulse until fully blended.
Then, make your zoodles:
Take one zucchini and spiralize it, according to your spiralizer’s directions.
Finally, divide the zoodles into two pasta bowls. Toss the zoodles with pesto, then add a couple handfuls of cherry tomatoes and a couple spoonfuls of feta, top with red pepper flakes, then serve.
Raw Pesto Zoodles with Tomatoes and Feta
