Easy Pan Seared Salmon 
Serves 2
1⁄2 pound salmon, cut into 2 fillets
1-2 tablespoons olive oil
1⁄2 lemon, sliced
Salt and pepper
  1. Place a pan over medium heat and add oil, swirling to coat the pan.
  2. Season fish with salt and pepper to taste. Once pan is hot place fish skin side down in the pan and let cook 4-5 minutes until skin is crispy. Flip fish over and let cook another 3-5 minutes until desired doneness.
Serve with a green salad or mixed vegetables and brown rice to round out the meal.
Take it to the next level… Drizzle cooked salmon with a little honey and add a dash of chili powder for a pop of flavor!
