Chocolate Cherry Truffles (Paleo, Vegan, Gluten-Free)
(Makes about 30 truffles)
3 cups walnut halves or pieces
1/2 cup cocoa powder
2 teaspoon vanilla extract
1/2 teaspoon fine sea salt
1 1/2 cups pitted Medjool dates
1/2 cup dried cherries
2 tablespoons water
Additional cocoa powder for coating
1. In a food processor, grind the walnuts into a very fine meal.
2. Add the rest of the ingredients to the walnut meal and process again until a thick, sticky dough is formed.
3. Scoop out tablespoon-size lumps of dough and roll with your hands into a ball. Place onto a plate or baking sheet lined with parchment paper to prevent sticking. Sprinkle the truffles with additional dusting of cocoa powder if desired.
4. Store the balls in the fridge in an air-tight container. They can also be frozen. Enjoy them at room temperature, chilled, or straight from the freezer.
