Chocolate Cherry Oatmeal Cookies
Makes 10-12 cookies
1 cup pecans, chopped
1 cup walnuts, chopped
1 cup rolled oats (choose gluten-free)
3/4 tsp baking powder
1/2 tsp cornstarch
1/2 tsp sea salt
1/4 cup pure maple syrup
1/4 cup coconut oil, melted
1/2 tsp vanilla extract
1/4 cup semisweet or dark chocolate chips
1/4 cup dried cherries
1. Preheat oven to 325 degrees. Pulse pecans and walnuts in a high speed blender until finely ground (Do this in batches.) Add ground nuts to a bowl and stir in oats, baking powder, salt, and cornstarch. Add oil, maple syrup, and vanilla. Stir to combine. Fold in chocolate chips and cherries.
2. Line a baking sheet with parchment paper. Scoop and firmly pack oat mixture a using 1/4-cup measuring cup and place on baking sheet. Using your fingers, press each one together so that it’s not too loosely packed.
3. Bake 10 minutes, rotate sheet once, and bake 10 more minutes until cookies are light golden.  Cookies will firm up as they cool. Let cookies cool completely before removing cookies with a spatula.
