Happy Fall!

You may have noticed I’ve been a little quiet since the summer. I’ve been taking some time off to enjoy the simple things that make this time of year so special – cooler weather, a little travel, long walks in the woods during the day, an outdoor fire pit at night, and fall vegetables at the farmers market.

One thing that makes October so special is the abundance of pumpkins. I couldn’t let another day go by without sharing my latest favorite pumpkin recipe with you.

If you want a delicious morning treat that tastes like fall, then you’re in luck. The typical pumpkin spice latte from most coffee shops can contain anywhere from 300 to 500 calories. My pumpkin spice cafe con leche is a yummy low-calorie alternative you can make at home in about 3 minutes.

Pumpkin Spice Cafe con Leche
(1 serving, 125 calories)

Ingredients:
1 cup unsweetened vanilla almond milk, warmed
2 tbsp pumpkin butter
brewed coffee to taste
fat free whipped cream
cinnamon

Instructions:
Stir pumpkin butter into warm almond milk until dissolved.
Add coffee to taste (I’m sensitive to caffeine, so I actually leave out the coffee and it’s just as delicious).
Top with a dollop of whipped cream and a pinch of cinnamon. Enjoy!
